A kombucha scoby (symbiotic community of bacteria and yeast) (also known as a starter culture, mother, mushroom, etc.) is a necessary component if you wish to make Kombucha which is a lightly effervescent fermented drink of sweetened black and/or green tea that is used as a functional food.
The scobies are between 5-8cm in diameter and are sent out dehydrated. They will grow into the form of the fermentation vessel in which they are placed. The leaflet includes instructions on how to rehydrate your scoby.
