Probiotic Potato Salad

This probiotic rich Potato Salad packs a nutritious punch, and is perfect for picky eaters. Milk kefir is so easy to make there's always plenty to around and if you've ever found yourself wondering what to do with it all, we've got you covered. Ingredients

  • 1 cup of milk kefir or home-made plain yoghurt

  • 1 medium sized bag of small baby potatoes

  • Gherkins (or home-made pickled cucumbers)
    finely chopped

  • 3-4 spring onions finely chopped

  • 1 hard boiled egg, finely chopped (optional)

  • Pickle juice or lemon juice (we prefer lemon)

  • Small bunch of fresh dill, finely chopped

  • Small bunch of fresh parsley, finely chopped

  • 4-5 fresh mint leaves, finely chopped

  • 1 clove fresh garlic, finely chopped (optional)

  • Salt and pepper to taste

Probiotic Potato Salad

Method

  1. Wash/rinse the baby potatoes - leave the skins on for extra goodness - then boil in some lightly salted water until soft when poked with a sharp knife (approximately 15-20 minutes).

  2. Drain the potatoes and set aside to cool completely.

  3. In the meantime prepare the milk kefir dressing by seasoning the milk kefir with the salt and pepper to taste and slowly whisking in 1-2 tablespoons of pickle or lemon juice at a time into the milk kefir until it reaches the consistency of a thin/runny salad dressing.

  4. Mix the chopped herbs and garlic (if using) into the milk kefir and set aside in the refrigerator, allowing time for the flavours to develop.

  5. Once the potatoes have completely cooled, cut them in half (or leave whole if you prefer) and place them in a large mixing bowl.

  6. Add in the chopped spring onion, gherkins or pickled cucumbers and the egg. Season with salt and pepper and before adding the milk kefir dressing and lightly toss the ingredients. Ensure that all the potatoes are well coated in the milk kefir dressing.

  7. Keep refrigerated and serve cold.
