Cheese salt enhances the flavour of the cheese and lends to it its saltiness it is further also used for preservation as well as brining certain cheeses. When making cheese it is important to use salt that does not contain iodine. Iodine will kill the lactic bacteria in the aging process and it is the lactic bacteria that is important to the proper aging of cheese. 

STORAGE: Store in a cool dry place. Will last indefinitely if stored properly.

Do not use iodized salt, iodine inhibits the growth of starter bacteria and slows the ageing process.
